Caryll's best ever (ever ever) lemon cake
This cake keeps extraordinarily well - if it gets the chance!
Whisk together...
2 cups (450g) of sugar
2 eggs
1 cup plain yogurt
3/4 cup of extra virgin olive oil
rind of 3 lemons
Then...
add 2 cups (250g) of self-raising flour and bake in a very well greased or greaseproof paper lined tin (a ring tin is ideal) for 45mins at 180 degrees. When its cooked top with 1/4 cup of sugar and 1/4 cup of lemon juice.
